Z Bar Like Butta Zeppoles

Ingredients
3 1/2 cups all purpose flour
1 1/2 tablespoons kosher salt
2 teaspoons baking soda
2 teaspoons pumpkin pie spice
1 cup sugar
4 eggs
2 cups buttermilk
10 tablespoons melted butter
Package active dry yeast, optional
Vegetable oil, for frying
Maple Glaze, recipe follows
Maple Glaze:
2 cups powdered sugar
2 teaspoons vanilla extract
1/2 cup maple syrup
Directions
- Combine the dry ingredients in large bowl. Whisk wet ingredients in a separate mixing bowl. If using dry yeast, add it to the melted butter. Stir the wet mixture into the dry mixture, 1/3 at a time, until combined.
- In a deep-fryer or heavy-bottomed pot, heat enough vegetable oil to come halfway up the sides of the pot, to 375 degrees F.
- Drop tablespoons of the batter in batches into the oil and cook until golden brown, about 3 to 5 minutes. Remove the zeppoles to paper towels to drain. Let cool on a wire rack.
- Dip the zeppoles in the maple glaze, or your choice of powdered sugar, cinnamon sugar, chocolate, white chocolate, caramel, sprinkles, or bacon toppings. Arrange on a serving platter and serve.

Maple Glaze:
- In a bowl, combine the powdered sugar and vanilla. Whisk in enough maple syrup to create a thick glaze. Add more sugar or maple syrup to achieve the consistency and taste you prefer.
