Chef and owner Phil Czarnec brings the low-and-slow heat of barbecue to exotic cuts of meat like alligator ribs. He uses a citrus marinade on the meat to not overwhelm the delicate flavor and then coats them in an apricot glaze. He is also known for his Smoked BBQ Burger. The beef is lightly smoked before being grilled and topped with Gruyere and a crispy onion ring filled with bordelaise sauce. “That’s like the Mount Everest of flavor,” said Rashad.
