How to Make Marshmallows — Duff's Sweet Spot

S'Mores Through the Roof

Duff takes the campfire indoors with his homemade marshmallows, which he uses to make this dessert. Watch the video and follow the steps to make the dish yourself.

For the marshmallows, you'll need powdered sugar, powdered gelatin, granulated sugar, light corn syrup, eggs, lemon and vanilla extract.

Use a deep half-sheet pan to create thick marshmallows.

Spray the pan with cooking spray, and cover the inside with plastic wrap. The oil will help the plastic stay in place.

Dust the interior of the pan generously with powdered sugar.

Cook the sugar, corn syrup and some water until it reaches the hard-ball stage, exactly 260 degrees F.

Meanwhile, bloom the gelatin in water. It will turn into a "hockey puck," says Duff.

Remove the pot of sugar from the heat and let it cool slightly.

Separate your eggs — you'll be using only the egg whites. Whip them with a few drops of lemon juice until they're foamy. Add the vanilla extract.

Stir the bloomed gelatin into the cooled sugar mixture.

Have your mixer on high, and in a steady stream, pour in the sugar-gelatin mixture. Whip until it's bright white and shiny.

Quickly pour the marshmallow mixture into your lined pan, pushing it onto the corners.

Smooth the top of the marshmallow mixture and dust the top generously with powdered sugar.

Cover the marshmallow mixture with plastic wrap touching the surface and let it sit at room temperature for at least 6 hours to set.

Turn the marshmallow out of the pan and dust off the excess powdered sugar.

Now, that's a pretty big marshmallow!

Using a knife or a cookie cutter, sprayed with a little oil, cut out your desired shapes.

Now, that's the perfect size for a marshmallow!

For the s'mores recipe, you'll want to use a kitchen torch to brown the marshmallows. Do this on a sheet pan so you don't scorch your countertops!

Pipe the chocolate mousse onto a plate.

Top with a graham cracker and a torched marshmallow.

Decorate with two chocolate-covered biscuit sticks held in place with some more chocolate mousse.
