On Thursdays, Damaris goes out swing dancing. This week, she invites her boyfriend to join her for a light and easy weeknight dinner of Black-Eyed Pea Salad with Fried Kalamata Olives and Parsnip, Acorn Squash Stuffed With Sausage, Barley and Goat Cheese, and "Dance the Night Away" Energy bars to enliven their spirits before the dance and keep them light on their feet.

And it's not a birthday party without cake: Damaris' Chocolate and Espresso Layer Cake with Peanut Butter Icing is a sophisticated, decadent sweet.
