Ingredients

  • 3 pink grapefruits, chilled
  • 3 ripe medium avocados, halved, seeded, and peeled
  • 3/4 cup sour cream
  • Juice of 2 large limes
  • 3 tablespoons honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Mint leaves for garnish

Directions

Slice ends off grapefruits and stand upright on a counter. Cut away skin and membrane, exposing fruit. Working over a bowl to catch the juice, separate sections by slicing with a serrated knife between membranes. Remove and discard the seeds. Slice avocado halves lengthwise in 1/2-inch slices. Arrange alternating grapefruit sections and avocados slices on 6 salad plates.

Whisk together sour cream, lime juice, honey, salt, and pepper in a small bowl. Just before serving, spoon about 2 tablespoons dressing in a stripe over each salad. Garnish with mint leaves and serve

Variations: Toss chunks of avocado and supremes of grapefruit with salt, pepper, and olive oil

    This salad and dressing is absolutely wonderful! I have made it on several occasions, and it's always a hit. I like to line salad plates with butter lettuce, then fan out the grapefruit segments on it. I slice the avocado, and place the slices among the grapefruit segments right before serving. This way the avocado doesn't turn brown before we have a chance to eat this delicious salad. Highly recommended!!!

    This was a very delicious dish. I had some leftover sauce, so I dipped granny smith apples in it for a snack, and it was very yummy! Definitely will make again!

    I played fast and loose with the dressing ingredients, adding some lime zest and spooning the sour cream, honey and lime juice together until it all tasted yummy. Instead of garnishing the salad with mint, I sprinkled torn mint leaves over the grapefruit and avocado before spooning on the dressing. The end result was a light and refreshing salad that had a haunting and addictive herb lilt to it. Even my boyfriend, who says everything he tastes is just "fine" turned around and said, "Wow, honey, the salad is delicious!"
