Ingredients

  • 3 tablespoons unsalted butter
  • 2/3 cup minced scallions
  • 8 large eggs
  • 4 ounces cream cheese, cut into bits and softened
  • Salt and freshly ground pepper, to taste
  • Snipped chives or thinly sliced scallions tops for garnish

Directions

In a medium non-stick skillet cook the scallions in the butter over moderate heat, stirring occasionally, until soft. In a bowl whisk together the eggs, cream cheese and salt and pepper. Pour the mixture into the skillet and cook over moderately low heat, stirring, or until cooked. Transfer to a serving plate and sprinkle with the chives or scallions.

    I googled cream cheese and eggs cause that's all I had to make breakfast, and ended up making these with some scallions I had in my garden. I liked it. Tasty and simple.

    Add a touch of sherry! That added to this recipe near the end of cooking is what I enjoyed at a hotel restaurant one morning in Manhattan while on a business trip. Wonderful twist on scrambled eggs!

    I have always made scrambled eggs like this as I learned the "creamed cheese secret" from my mother!! I also add the sauteed chopped onions or chopped green onions. Sometimes I add chopped bacon or ham, and sauteed mushrooms also are delicious! This recipe makes the best scrambled eggs in the world!!
