Ingredients

  • 2 cups chopped walnuts, preferably toasted
  • 1 cup dried, unsweetened cherries

Directions

Combine the ingredients in a medium bowl. Portion 1/3 cup servings into snack-sized sealable plastic bags.

    My family and i were going to start a long day of shopping, and before we left, i quickly put this together just in case we... got hungry-- and i'm GLAD it did!! Halfway thru we were not only starving, we weren't willing to waste calories by buying fast food. This gave us just enough of a quick boost to continue with the rest of our day w/o any of the guilt. I love that ellie portions out the recipes just so we know how much we should eat.Read more

    This is a great snack because it's so portable and essentially non-perishable. I put my own spin on this snack recipe but... she provides a great starting point! I used 1/2 golden raisins (yummy sweet) and 1/2 unsweetened cranberries (yummy tart). Also, I used almonds b/c that's what I have on hand. So, really I didn't follow her recipe at all. Ha!Read more

    Okay, I don't normally even like walnuts but after seeing how easy this was to put together, I thought why not just try it. ... Well, the taste is amazing. Having the walnuts toasted makes all the difference. I had a very hard time finding unsweetened cherries locally (we don't have a Trader Joe's here) so I had to improvise with a mixed cherry mix (slightly sweetened). The batch turned out very tasty. Highly recommend this snack!Read more

    I don't know that I would call this a recipe, but its certainly a great idea. I did not toast the nuts first, just used them... raw. The only place I can find cherries w/o any sweetner or added oil is Trader Joes. I think next time I will cut the cherries in half so they get distributed more. This would be a great snack on your way to the gym!Read more

    this is one heck of an awesome snack! Easy to make and toasting the walnuts makes it even better. It sure beats one of those... processed snacks off the grocery store shelves. I actually look forward to eating this during the work day. Highly recommend.Read more

    I never thought about roasting walnuts and then to add the cherries to. To easy to do. I never had dried cherries before and... my taste buds was having a party.Read more
