A fun and delicious twist on the classic BLT. We’ve replaced thick sliced juicy summer tomatoes with watermelon. The juicy fruit surprisingly is a great match for the crunchy bacon and lettuce, creamy mayonnaise and toasted brioche.
Pat dry four 1/2-inch-thick seedless watermelon slices (rind removed); season with salt and pepper. Combine 1/2 cup mayonnaise, 1 tablespoon lemon juice and a pinch each of salt and pepper; spread on 8 slices toasted brioche bread. Sandwich the watermelon, romaine lettuce leaves and cooked bacon between the bread.
