Whisk together 6 tablespoons sugar, 1 1/2 teaspoons each kosher salt and cinnamon, 1/2 teaspoon each ground ginger and allspice and 1/4 teaspoon each ground cloves and nutmeg in a small bowl. In a large bowl, whisk 1 egg white until frothy. Add 2 cups each walnuts and pistachios, sprinkle with the spice blend and toss. Spread out on an oiled rimmed baking sheet. Bake at 350˚ F, stirring occasionally, until golden, 15 to 20 minutes. Let cool; mix with 1 cup dried cranberries.
