This is a great recipe for first time vegan cheese eaters. The vegan cheese shreds melt perfectly in the same way a regular sliced cheese would, making it hard to recognize any difference! The caramelized onions also cut the richness of the cheese, adding a touch of sweetness to this classic sandwich.
Heat the vegetable oil in a large nonstick skillet over medium-low heat. Add the onions and a big pinch of salt and cook, stirring occasionally, until deeply browned and caramelized, 25 to 30 minutes. Add the Worcestershire sauce, mustard powder and cayenne and toss to evenly coat. Taste and adjust the seasoning with salt. Remove the onions to a bowl and wipe out the skillet.
Spread 1 teaspoon mayonnaise on one side of each slice of bread. Heat the skillet over medium heat. Add 2 slices of bread to the skillet, mayonnaise-side down. Top each with 1/3 cup cheese and 2 heaping tablespoons of the caramelized onions; top each with another slice of bread, mayonnaise-side up. Cook until golden brown on the bottom, 2 to 3 minutes, then carefully flip and cook until browned on the other side and the cheese is melted, 2 to 3 more minutes. Remove to a plate and repeat to make the remaining 2 sandwiches.
