In a large container with a lid, combine the almond milk, almond butter, cherry preserves, cocoa powder, maple syrup, almond extract and salt. Stir in the oats. Refrigerate overnight until set.
Stir the oat mixture, then divide among four 8- to 10-ounce jars or glasses, layering the chopped cherries with the oats. Top with the yogurt and grated chocolate, if desired.
