Ingredients

  • 3 (15-ounce) cans baby beets, drained
  • 2 tablespoons raspberry vinegar
  • 2 tablespoons freshly squeezed orange juice
  • 3 tablespoons good olive oil
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup small-diced red onion (1 small onion)
  • 2 large seedless oranges, zested
  • Segments 2 large seedless oranges

Directions

Drain the beets and dice into 1/2-inch cubes. Place the beets in a mixing bowl and add the raspberry vinegar, orange juice, olive oil, salt, pepper and red onions. Zest the oranges and then segment over a bowl to catch the juices. Add the orange zest, orange segments, and any juices and mix well. Taste for seasoning and serve cold or at room temperature.

    I think this is a garnish...not a side dish.....

    Ina - love you...but this one makes a huge amount. I would definitely cut it in half...and think of it more as a garnish... than a side. Also spent bookoo $ on raspberry vinegar (really got a great one with pulp...yummy) - but felt it was lost in the salad. I added a drop of balsamic - which I would recommend over the raspberry. And peeps...I LOVE beets. This is just way over the top in terms of the amount of them. You're not preparing for a restaurant. P.S. You might want to try adding goat cheese before serving - or feta as another reviewer suggested. I tried both. (Wish I had had blue cheese as someone suggested...I think that would be the perfect compliment.) JTRead more

    Frankly, I really dislike beets. However, my husband loves them. With the combination of beets and orange, thought this... just might be the recipie to convert me and it worked! It's not only tastey but beautiful. If letting the beets marinate, you may want to add the orange zest and orange sections at the last minute so they do not turn colors.     I really liked this salad. I must've zested into the white part of the orange because it got a little bitter but that's my... fault. I'll make this again and be more careful next time. Also, I bought the raspberry vinegar for this recipe and then relaized I had some orange/champagne vinegar from Trader Joe's which would've worked great also. I added a little crumbled blue cheese on top which was a nice touch. Feta would work good too. This would be good on a bed of arugula. Yum. Read more

    Such a delicious Clean Palette Food-Not for non lovers of beets, but for me I give it a 10!

    I used fresh beets and roasted them at 400 for 40minutes. I also did not know how to zest an orange so i went on utube and... learned how to and how to take out the orange slices without the membranes. OMG. how amazing. This was the best Salad ever. It's such a colorful dish too :)Read more

    At first when I read this recipe I thought this was a strange combination of ingredients but loving beets the way I do I gave... it a try. I am so glad that I did. What a wonderful flavor, and a beautiful dish. I will make this many times in the future!Read more
