Ingredients

  • 2 bunches radishes with the tops intact
  • Sea salt
  • Good salted butter or Herbed Butter, recipe follows
  • 1 French baguette, sliced diagonally, and lightly toasted

Directions

Arrange the radishes on a bed of sea salt. Spread the butter on slices of toasted bread and arrange artfully on a platter. Serve at room temperature.

Herbed Butter:

  • 1/4 pound unsalted butter, at room temperature
  • 1 1/2 teaspoons minced scallions
  • 1 1/2 teaspoons minced fresh dill
  • 1 1/2 teaspoons minced fresh parsley leaves
  • 1/2 teaspoon freshly squeezed lemon juice
  • 1/2 teaspoon kosher salt
  • Pinch freshly ground black pepper

Combine all the ingredients in the bowl of an electric mixer fitted with the paddle attachment on low speed until combined. Do not whip.

    I grated the radish directly into the herb butter (II like the radish flavor, but I'm not really into huge chunks of... radishes). I'll serve this on top of pan fried potato cubes, bread or poached eggs. delish!Read more

    I've made this before and sliced the radishes and put it on top of the bread, now that it's summer, I grilled some Chibatta... (sp?) bread and once I took it off, I slathered it in the herb butter - I think it was the best part of the meal. I will now be making this for the 4th of July cookout. ps. you don't need to mix it in a machine, just use very room temperature butter and mix with whatever you have on hand. Yahoo......loved it.Read more
