Ingredients
- 6 ounces raw pork chorizo
- 1/2 medium white onion, finely chopped
- Two 15.2-ounce cans refried pinto beans
Directions
Heat a medium saute pan on medium heat. Add the chorizo and cook until golden in color, about 6 minutes. Remove the chorizo to a drain on a plate lined with some paper towels. Add the onions to the pan with the chorizo fat. Saute until the onions are translucent, about 4 minutes. Return the chorizo to the pan. Add the refried beans to the mixture. Continue cooking for about 5 minutes. Turn the heat off and reserve for tostadas and burritos.

This is my daughter who is now a junior at the University of Georgia (Go DAWG's! favorite dish in the world when it come to Mexican food and I have never seen her even taste a refried bean prior to making this dish. I do throw in a chopped fresh jalapeño and thin the recipe out with a few tablespoons of water because it tastes better not so thick. Scatter some cheese on top and that girl can eat it all! Great recipe.

Wow, what a kickin' easy and delicious way to dress up a can of refried beans. I halved the recipe and hubby ate half of them with chips before dinner was ready. Would be great for nachos, tostadas, etc., but are great on their own too. Will always add chorizo and onions to my refried beans from now on.

Very tasty and very easy! I used ground pork sausage instead of chorizo but I would think the chorizo would also taste great in this. I used these bean in her Chicken Tostadas recipe, which she made on the same show. And those were yummy too!
