Ingredients
- 1/4 cup extra-virgin olive oil
- 6 small ripe but firm tomatoes, halved, seeded and finely diced
- 2 cloves garlic, minced
- 8 fresh basil leaves, chiffonade
- Cayenne pepper, to taste
- 1/4 teaspoon salt
- 8 (1/2-inch thick) slices Italian country bread
- 2 cloves garlic, halved
Directions
In a bowl, combine the olive oil, tomatoes, minced garlic, basil, cayenne, and salt. Set aside for at least 60 minutes to marinate.
Preheat an outdoor grill or grill pan to medium heat.
Grill the bread until it is browned on both sides, about 2 minutes per side. While still warm, rub each side with the cut garlic. Divide the tomato mixture on top of each bread slice. Arrange on a platter and serve.

This recipe should be the first one listed under the "bruschetta" recipe search. My husband and I have a large garden and grow all types of tomatoes. He goes crazy when I make this with those first of the season tomatoes and a great glass of wine! If you use different color tomatoes the presentation is beautiful! You will have company eating out of your hands and it is SO simple! For added ease cut the bread horizontal in two planks, grill the bread, rub with garlic and add tomato then slice and have some fresh grated parmesan to go on top!

I agree with other users...use only one clove for less garlic taste. We love garlic, but it overpowered the dish.
