Bacon Wrapped Asparagus Bundles

These bundles can be easily prepared on an outdoor grill or in a hot oven.

Ingredients
  • 1 1/2 pounds asparagus spears, trimmed 4 to 5 inches long tips
  • Extra-virgin olive oil, for drizzling
  • A few grinds black pepper
  • 4 slices center cut bacon or pancetta
  • Chopped chives or scallions, optional garnish
Directions

Preheat oven, if using, to 400 degrees F.

Lightly coat asparagus spears in extra-virgin olive oil. Season the asparagus with black pepper. Take a quick count of the spear tips. Divide the total number by four. Gather that number of spears and use a slice of bacon to wrap the bundle and secure the spears together. Repeat with remaining ingredients.

To grill, place bundles on hot grill and cover. Cook 10 to 12 minutes until bacon is crisp and asparagus bundles are tender.

For oven preparation, place bundles on slotted broiler pan. Bake 12 minutes.

I was all set to put these on the grill when the rain started. So I shifted to the oven. Although the asparagus was done in the time allotted, the bacon was nowhere near done. My husband and kids loved this.I did add a little sugar on the bacon as recommended by some other reviewers ... great idea! But I think the time is a little off. I par-cooked the bacon and the asparagus first, then made the bundles. After 15 minutes in the oven, they still did not look done, so I put them on the grill for a few minutes while the steak was cooking. Great tasting!! I had followed another reviewers tip and cooked the bacon to take the chill off and till it started to get slightly wavy. My husband is on a very low sodium diet (kidney failure, so we only use bacon for something special -- and then it's low-sodium, low fat turkey bacon (not like real bacon, but not bad. I tried these on the grill like a few others mentioned. Its not a good idea, I will say i have a cheap gas grill so its hard to control the temp. Even so i put these on the top rack and they still caught on fire. Had to pull them off while the bacon was still raw just to save the dish. This was really good. All I had on hand was the pre cooked bacon that you still need to crisp up in the microwave, so I parboiled the asparagus for less then a minute before wrapping and then baked as normal. I thought this was a solid starter recipe, but it could certainly use an extra punch. I like highly-flavored food, so I added a bit more salt and some cayenne. The only thing different I did to the recipe was that when it was done being bake the bacon wasn't crispy enough for me so I broiled each side for an additional minute and voila it was done. I prepared this as a side to go with a low-carb almond chicken dish I prepared for my boyfriend's birthday dinner. It was so quick and simple that the taste of it surprised me. The oiive oil helped to give the asparagus a nice color. The bacon definitely gave the asparagus a great flavor that was in no way overpowering and the pepper and chives actually balanced it all. My boyfriend said he was afraid to eat it because it was so pretty, but it was the first thing he ate from his plate. So good! I had to cook the asparagus a little longer than the 12 minutes as stated. I have a relatively new oven, so I'm not sure if that had anything to do with it, but after the 12 minutes, I broiled the asparagus on both sides for 2-3 minutes each.
