The Drummonds are a family of chocolate lovers, and these chocolate mini muffins are an absolute favorite. They are simple to make, take very little time to cook and are perfect for a chocolate fix whenever you have one.
Preheat the oven to 375 degrees F. Spray a 24-hole mini muffin tin with baking spray.
In a large bowl, mix the buttermilk, brown sugar, butter, vanilla and egg. Sift the flour, cocoa powder, baking powder, baking soda and salt into the bowl. Fold together. Add and fold in all the chopped chocolate. Using a 1-teaspoon scoop, fill the prepared muffin tin.
Bake until the muffins have puffed and cooked through, 10 to 12 minutes. Remove and let sit for 10 minutes before removing and serving.
