Ingredients
- 1 cup canola oil
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/4 cup bread crumbs
- 1 1/2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- Salt and freshly ground black pepper
- 6 pork chops, loin end (about 3 pounds)
Buttered Beans:
- 4 tablespoons butter, divided
- 1 thick slices deli ham (1/8 pound), diced
- 1 medium onion, chopped
- Salt and freshly ground black pepper
- 3 (15-ounce) cans butter beans
Directions
In a heavy-bottomed skillet heat the canola oil over medium-high heat.
In a shallow baking dish or pie plate combine the flour with cornmeal, bread crumbs, Italian seasoning, garlic powder, paprika, cayenne, salt and pepper, to taste. Put the pork chops into the flour mixture coating completely and shaking off excess. Fry in hot oil until golden brown on both sides and cooked through, about 3 to 4 minutes on each side. Remove the chops from oil and drain on a sheet pan lined with a brown paper bag. Reserve 2 chops for Round 2 Pork Parmesan recipe.
Buttered Beans:
In a large skillet, melt 2 tablespoons of butter, then add diced ham and saute until lightly browned. Add the onions, and remaining 2 tablespoons butter, salt and pepper, to taste and saute until translucent. Add the butter beans and saute for 5 minutes. Reserve 2 cups of the sauteed beans and onions for Round 2 Bean Dip recipe. Arrange the chops on serving plates and serve with the beans alongside.

The market I was at that day didn't have the lower priced cut of pork chops, so I went with what they had. This was absolutely delicious. My husband isn't a pork chop fan, but he had 2nd servings. Seasonings: I followed exactly what the recipe called for, then I seasoned more according to my and my families' taste. No excuse for saying something was bland. We all know what we like. Follow the recipe then adapt to YOU. Enjoy!

I made the pork chops and butter beans for dinner tonight. The pork chops needed more seasoning I think, but the butter beans were awesome. I will definitely make the butter beans again. Thanks for the recipe.
