Ingredients

  • 1 pound fresh haricots verts, washed and trimmed
  • 1/4 cup sour cream
  • 2 tablespoons cream
  • 1 teaspoon white truffle oil
  • 1 pinch salt
  • 1/2 teaspoon lemon juice (recommended: ReaLemon)

Directions

Special Equipment: Microwave safe dish

Place haricots verts in microwave-safe dish and drizzle with water. Microwave on high for 3 to 4 minutes and chill haricots verts in refrigerator for 10 to 15 minutes. In a small bowl, combine sour cream, cream, truffle oil, salt, and lemon juice and mix thoroughly. Add chilled haricots verts to sour cream mixture and toss to coat. Serve chilled.

    the smell of the truffle oil was so terrible, i could not even sample the beans. my husband tried them though, and he did not like them (even though he is not picky at all. we gave them to my in-laws and they did not like them either.

    I just read some of the reviews for this recipe as I was sending it to a friend of mine and was surprised by the mixed reviews. I thought this was a great recipe for green beans...very easy, very different, and also delicious. I suppose the white creamy coating on the beans must be offputting for some people, in which case, I think I would suggest just adding a bit more of the cream to thin it out a bit. But, I had NO trouble with curdling and I loved the idea that this is like a salad in that the beans are cold. The truffle oil creates a wonderful flavor and makes a very rich dish out of basic and bland beans! I added quite a bit more salt than I would have thought it could take...and it was wonderful. Fed to a group of 10 as a side and everyone loved it.
