Ingredients

  • 2 ripe avocados
  • 2 ripe bananas
  • 1 lemon, juiced
  • 2 mangoes
  • 2 slices watermelon
  • Lots of chipped ice
  • 1/2 cup thick coconut cream or evaporated milk
  • 1/4 cup simple syrup, or more

Directions

Peel avocados and cut into cubes. Do the same with the bananas. Squeeze lemon juice over the fruits to prevent discoloration. Peel and cut mangoes into cubes along with the watermelon. Mix the fruit with the chipped ice and pile into 4 individual ice cream glasses.

In a bowl, whisk together the coconut cream and simple syrup, to taste and drizzle it over the fruit-ice mixture. Serve immediately.

This is wonderful recipe with a little exotic flair and VERY easy to make. I used orange supremes instead of the avocado (didn't have one on hand and instead of simple syrup, I used brown sugar to lend a more Thai feel.
It was superb and everyone gulped it down. I will make this one many times.
