Ingredients
- 2 Granny Smith apples, cored and cut into 1/2-inch chunks
- 1 pound honeydew melon, cut into 1/2-inch chunks
- 1 (20-ounce) can pineapple rings in syrup, drained and cut into small wedges
- 1/2 cup dried cherries
- 1/2 cup plain yogurt
- 1/2 cup cream of coconut
- Pinch of salt
Directions
In a large bowl add the apple chunks, honey dew melon, pineapple chunks, dried cherries, yogurt, cream of coconut and a pinch of salt. Stir to combine.

Sunny, you are a genius! I LOVE this salad... the only change I made was fresh blueberries for the cherries. Excellent and easy!

Just made this for dinner. What can I say...It was quick AND delicious. Everybody loved it. It will definitely be a frequent visitor to our table!
