Ingredients

  • 2 Granny Smith apples, cored and cut into 1/2-inch chunks
  • 1 pound honeydew melon, cut into 1/2-inch chunks
  • 1 (20-ounce) can pineapple rings in syrup, drained and cut into small wedges
  • 1/2 cup dried cherries
  • 1/2 cup plain yogurt
  • 1/2 cup cream of coconut
  • Pinch of salt

Directions

In a large bowl add the apple chunks, honey dew melon, pineapple chunks, dried cherries, yogurt, cream of coconut and a pinch of salt. Stir to combine.

Per Serving (based on a 6-serving yield): Calories: 274; Total Fat: 4.5 grams; Saturated Fat: 3.5 grams; Protein: 2 grams; Total carbohydrates: 60 grams; Sugar: 53 grams; Fiber: 4 grams; Cholesterol: 1 milligrams; Sodium: 86 milligrams

    Sunny, you are a genius! I LOVE this salad... the only change I made was fresh blueberries for the cherries. Excellent and easy!
