Ingredients

  • 5 jumbo sweet potatoes, halved
  • 8 tablespoons (1 stick) butter, at room temperature
  • 1 cup heavy cream
  • 3 tablespoons coarsely ground black pepper
  • 3 tablespoons salt

Directions

Preheat the oven to 350 degrees F.

Place the sweet potatoes on a baking sheet, drizzle with olive oil and bake until soft, about 20 minutes. When cool enough to hold, remove the peels and place in a saucepot. Add the butter, cream, salt and pepper and mash together.

    I think the recipe is supposed to have the salt and pepper be 3 TEASPOONS, not tablespoons. The recipe turned out way too seasoned.
