Mango lassi is a refreshing, cooling drink served with meals in India. It’s a childhood favorite, made vegan in this recipe, that celebrates the king fruit.
Combine the mango puree, yogurt, frozen mango and lemon juice in a blender and pulse until almost smooth. Blend in 1 1/2 to 2 cups water as needed until smooth. Pour into glasses. Garnish with mint sprigs and crushed cardamom seeds.
