Ingredients

  • 2 cups thinly sliced Japanese cucumbers
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 tablespoon soy sauce
  • 1/4 cup rice wine vinegar
  • 1 teaspoon sesame oil
  • 2 teaspoons sesame seeds

Directions

If Japanese cucumbers are not available, English cucumbers can be substituted. The English cucumbers need to be peeled, cut lengthwise, seeded and sliced into thin half moons. In a large bowl, combine cucumbers and salt and mix well. Add sugar, soy sauce, rice wine vinegar and sesame oil and mix well. Sprinkle with sesame seeds and mix. Let marinate for 20 minutes before serving. Adjust seasonings before serving.

    I did a couple of things wrong but when those are corrected this will be very nice. I salted a drained the cucumbers ahead... of time to remove excess moisture but that allowed too much marinade soak into the cucumbers. I also let the cucumbers sit too long in the marinade (3 hours) and the flavor of the cucumber was lost. But I thought the flavors were really great and didn't think the sesame flavor overwhelming at all. Maybe the previous reviewer added too much sesame oil. Next time I'll add some crushed red pepper and garlic for a little zing. Very nice recipe.Read more

    Perhaps I'm partial to cucumber salads made with yogurts, sourcreams or various vinegars, all of which I like. The sesame... oil overpowered the cucumber and created a truly awful dish with a very discordant flavor. Into the garbage it went. Everyone disliked it and I did follow the recipe exactly and used excellent ingredients.Read more
