Ingredients
1/2 cup heavy cream
2 teaspoons sugar
1/4 cup chocolate chunks or chopped chocolate
1/4 cup chocolate syrup
Two 2 1/2-ounce bags apple chips
1/4 cup Peanut Butter Sauce, recipe follows
1/3 cup granola
1/3 cup diced strawberries
1/2 teaspoon cinnamon
1 tablespoon chopped fresh mint
Peanut Butter Sauce:
1 cup creamy peanut butter
1/4 cup coconut oil, melted slightly until liquid
2 tablespoons confectioners' sugar
1/2 teaspoon sea salt
Directions
- In a medium bowl, beat together the heavy cream with the sugar until soft peaks form. In another small bowl, mix together the chocolate chunks with the chocolate syrup.
- To assemble the nachos, layer 1 bag of apple chips on a serving platter. Top with half of the toppings: the Peanut Butter Sauce, granola, strawberries, whipped cream and chocolate chunk sauce. Sprinkle with half of the cinnamon. Add a second layer of apple chips and top with the remaining toppings. Sprinkle with the chopped mint and serve immediately.
Peanut Butter Sauce:
- Put the peanut butter, coconut oil, confectioners' sugar and sea salt in a blender or food processor and process until smooth.
