Avocado Toast Pizza

Ingredients

One 10.5-ounce goat cheese log

1 cup mascarpone 

1 cup ricotta 

2 tablespoons freshly torn basil leaves 

2 tablespoons fresh oregano leaves 

1 clove garlic, minced

1 lemon, zested 

Kosher salt and freshly ground black pepper 

1 pound pizza dough, proofed and ready to bake 

All-purpose flour, for dusting

Olive oil, for drizzling 

Parmigiano-Reggiano, for grating 

4 firm but ripe avocados, halved, pitted and sliced 

Sea salt, for sprinkling

Crushed red pepper, for finishing 

Directions

Special equipment:
a pizza stone; a pizza peel
  1. Preheat a pizza oven or oven to 450 degrees F and place a pizza stone on the middle shelf.
  2. Combine the goat cheese, mascarpone, ricotta, basil, oregano, garlic, lemon zest, salt and pepper in a food processor and blend until smooth.
  3. Divide the dough into 2 pieces and roll out on a lightly-floured surface. Place 1 piece of dough on a pizza peel and drizzle the dough with 2 tablespoons olive oil. Smear half the cheese on evenly. Freshly grate about 1/4 cup Parmigiano-Reggiano on top. Bake until the crust is crispy, about 10 minutes. Repeat with the remaining dough.
  4. Fan out the avocado on top of the cheese. Drizzle with olive oil, then sprinkle with sea salt and crushed red pepper, to taste.
  5. Slice and serve.

Thank you Michael Voltaggio!! My daughter wanted either avocado toast or pizza for dinner, and I found your recipe. Bear in mind I am only rating it a 4 because my local store didn’t have thawed pizza dough so I had to use the pop-container type. The avocado’s I had were not the ripest either, but it didn’t matter. It was great!! She loved it!! Next time with real pizza dough and slightly more ripe avocados.
