Red Cabbage Slaw

Ingredients

1/2 cup freshly squeezed orange juice

1/4 cup freshly squeezed lime juice

1/2 small red onion, coarsely chopped

2 cloves garlic, coarsely chopped

1/4 cup fresh basil leaves

2 tablespoons chopped cilantro leaves

1 tablespoon honey

1/2 cup canola oil

Salt and pepper

1/2 head red cabbage, finely shredded

Directions

  1. Combine all ingredients, except cabbage, in a blender and blend until smooth. Season with salt and pepper, to taste. Place cabbage in a large bowl and toss with the vinaigrette. Season with salt and pepper and let sit 30 minutes in the refrigerator before serving.

Made this as written. The basil is over powering but I grow my own and cut it off the plant so very fragrant. The honey is not enough sweet to cut the acidity. I’ll try again and sub sugar for the honey, add a jalapeño, and drop the basil. Maybe increase the cilantro. But as written…Meh.
