Bok Choy Salad

Ingredients

1 medium head bok choy, diced

4 green onions, sliced

1 (3-ounce) package ramen noodles

1/2 cup slivered almonds, toasted

2 tablespoons sesame seeds, toasted

1/4 cup extra-virgin olive oil

2 tablespoons lemon juice

1 tablespoon tamari

Directions

  1. Combine bok choy and onions and chill.
  2. Break up the uncooked ramen noodles and combine with the almonds and sesame seeds..
  3. Mix remaining ingredients.
  4. Before serving, combine the bok choy and noodle mixtures. Mix together the oil, lemon juice and tamari. Toss the salad with the dressing to coat.

I found this recipe when I was looking for something to make with baby bok choy other than the usual saute, grill, steam, etc. I'm amazed only three people have reviewed this recipe. It's a wonderful salad, full of flavor and so very easy to make. I love it. It's a keeper. It reminded me of a salad that was popular in the 80's Oriental Chicken Salad, which had the same ingredients, but used regular green cabbage and shredded chicken breast and almost the same dressing. I never would have thought to replace the cabbage with bok choy (or use bok choy as a salad green). I did mix the flavor packet (chicken) from the noodles with uncooked ramen nooodles, almonds and sesame seeds. To the dressing I added 2 TB sugar and 1 TB sesame seed oil. I dressed the salad about 15 minutes before serving. This is a such a good use of Bok Choy and was a perfect side to Sesame Noodle Salad. Definitely a keeper.
