Carrot Ginger Dressing

Ingredients

2 cups cooked carrots

1 cup chopped shallot

2/3 cup sliced fresh ginger

7 ounces vegetable oil

4 ounces rice vinegar

4 ounces light soy sauce

Directions

  1. In a food processor, puree all ingredients until smooth.
