Ingredients
1 cup vegetable broth
1 cup whole, unroasted cashews
1/4 cup nutritional yeast flakes
2 tablespoons fresh lemon juice
1 tablespoon miso paste
1 tablespoon onion powder, or more as needed
1/4 teaspoon salt, or more as needed
1/4 teaspoon ground turmeric, or more as needed
1 roasted red pepper, seeded and chopped (about 1 cup)
Directions
- Place the broth, cashews, yeast flakes, lemon juice, miso, onion powder, salt, turmeric and roasted red pepper in a high-speed blender and blend until completely smooth, using a rubber spatula to scrape down the sides every 20 seconds or so, for about a minute or two. Taste for salt and seasoning.
