Charred Cabbage with Citrus Tahini Dressing

Ingredients

Cabbage:

1 head pointed cabbage or savoy cabbage

1 tablespoon olive oil

Pinch flaky sea salt

Pinch freshly ground black pepper

Dressing:

1/2 cup tahini

2 limes, juiced

Pinch flaky sea salt

To serve:

2 tablespoons fresh parsley, chopped

Directions

Special equipment:
a ridged griddle pan
  1. For the cabbage: Preheat a ridged griddle pan over medium-high heat.
  2. Slice the cabbage in half and cut away the core inside. Then cut in half again to make 4 quarters. Drizzle over the olive oil and season with the salt and pepper.
  3. Place on the griddle and cook for around 2 minutes on each side, until charred on all 3 sides. Whilst grilling make the dressing.
  4. For the dressing: In a small bowl, mix together the tahini, lime juice and sea salt.
  5. To serve: Put three-quarters of the dressing on a platter and lay the charred cabbage on top. Drizzle the remaining dressing on top. Sprinkle over parsley to garnish.
