Chicken Caesar Focaccia Sandwiches

Ingredients

1 bag Caesar salad kit

1/2 package (about 6 ounces) grilled chicken strips, chopped

1 loaf focaccia bread

Eight 4-inch rosemary stalks

8 cherry tomatoes

Directions

  1. In a large bowl, combine all contents of salad kit and chicken strips. Toss to combine.
  2. Cut focaccia loaf in half horizontally. Fill focaccia bread with chicken Caesar salad. Cut focaccia sandwich into 8 portions.
  3. Take each rosemary stalk and strip bottom half of the rosemary from the stalk, leaving leaves at top.
  4. Insert rosemary skewers through tomatoes.
  5. Insert each rosemary-tomato skewer into the top of each sandwich.

I got the caesar kit like I saw on the show. I had to go to three different grocery stores to find focaccia bread. In the end I used some fresh romaine because the bag salad was mostly the not so great parts of the lettuce. I used the little package of dressing from the kit and it just wasn't enough for the sandwiches. I used fresh parmesan instead of the grated stuff that came in the bag. I don't think it was worth going to all those stores to find the bread. My sandwiches didn't really end up being semi-homemade at all. And if I ever made it again, I would purchase dressing so I could have plenty of flavor. I also had to use toothpicks because the herb wouldn't hold the sandwiches together.
