Citrus Vinaigrette

Ingredients

16 ounces of orange juice, reduced by 1/2 in volume

Juice of one lemon

1/2 cup peanut oil

1/4 cup rice wine vinegar

Directions

  1. Place juice in a blender or food processor. Add vinegar and slowly add peanut oil to emulsify. Salt and pepper to taste

This was very easy to make! We love the Trader Joes Orange Muscat Champagne Vinegar mixed with EVOO for a light salad dressing, but we're about 6 hours away from the nearest Trader Joes. This dressing makes a delightful substitute when we run out. One thing though...we substituted EVOO for the Peanut Oil.
