Ingredients

1/2 cup olive oil

1/4 cup sherry vinegar 

2 teaspoons salt, or more if needed

1 pinch sugar, or more if needed

Few cracks freshly ground black pepper, or more if needed

1 almost-empty 8-ounce jar Dijon mustard 

Directions

  1. Add the olive oil, sherry vinegar, salt, sugar and pepper to the Dijon jar, close with the lid and shake. Taste and season additionally if necessary.

I'd do the salt to taste for sure. 2 tsps equals 4650 mg of sodium. And, dijon already has sodium. I used some balsamic in place of so much salt.
