Ingredients

4 plum tomatoes, cored, seeded and cut into large chunks

1 jalapeno pepper, stemmed, seeded and sliced

1 tablespoon lime juice

2 teaspoons olive oil

Salt and pepper

Directions

  1. Put tomato, pepper, lime juice, and olive oil in a blender and puree until smooth. Season with salt and pepper.

Overall great recipe. Turned out a bit juicier than anticipated. Also, not as much kick, even though I added 2 jalapenos. But the taste was still great! I'd make it again, but probably w/ some tweaks. Also, I used lemon juice as that's what I had on hand.
