Fresh and tart, this easy Mexican salsa is the perfect accompaniment to frosty margaritas and cold beer when served with a never-ending bowl of tortilla chips. Or, it makes a great relish for grilled chicken and pork.

Ingredients

6 tomatillos, husks removed, charred under the broiler for 5 minutes

1/2 cup packed fresh cilantro (leaves and thin stems only)

1/2 poblano pepper, seeded and chopped

1/2 small red onion, minced

Juice of 1 lime (about 2 tablespoons)

Kosher salt

Directions

  1. Combine the tomatillos, cilantro, poblano, onion, lime juice and 1 teaspoon salt in a blender. Pulse until broken down but still chunky, scraping the inside of the carafe as necessary.
