Fresh and tart, this easy Mexican salsa is the perfect accompaniment to frosty margaritas and cold beer when served with a never-ending bowl of tortilla chips. Or, it makes a great relish for grilled chicken and pork.
Combine the tomatillos, cilantro, poblano, onion, lime juice and 1 teaspoon salt in a blender. Pulse until broken down but still chunky, scraping the inside of the carafe as necessary.
