Chocolate-Chia Pudding

Chia seeds give this super-chocolaty pudding a satisfyingly rich texture.

Ingredients

2 1/4 cups 2-percent milk

4 ounces semisweet chocolate, finely chopped

1/4 cup unsweetened cocoa powder

3 tablespoons light agave nectar

Kosher salt

1/4 cup chia seeds

1 teaspoon pure vanilla extract

Directions

  1. Cook the milk, chocolate, cocoa powder, agave and a pinch of salt in a medium saucepan over medium-low heat, whisking constantly, until the chocolate melts and the cocoa dissolves, 6 to 8 minutes. Transfer to a medium bowl. Stir in the chia seeds and vanilla. Let cool, stirring every 10 minutes, to room temperature, about 1 hour. Refrigerate, covered, until chilled, 8 hours.

Agave? Higher on the glycemic index than HFCS…. Recipe’s ok but replace sweetener.
