Kentucky-Style Mutton Dip

Ingredients

1/2 cup Worcestershire sauce

1/2 cup apple cider vinegar

2 tablespoons packed light brown sugar

1 tablespoon fresh lemon juice

1/4 teaspoon ground allspice

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Kosher salt and freshly ground pepper

Directions

  1. Combine 4 cups water, the Worcestershire sauce, vinegar, brown sugar, lemon juice, allspice, garlic powder, onion powder, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a medium saucepan. Bring to a boil, then reduce the heat to medium low and simmer 5 minutes.

This recipe wasn't put together by anyone from western Kentucky, that's for sure.  True Kentucky Black BBQ Sauce uses equal portions of Worcestershire Sauce and water.  Also, many BBQ joints will put some tomato paste in it to thicken it up somewhat and give it some added zest.  It counters the vinegar nicely.  Some will add white pepper and even lemon pepper to their dips.  This recipe was good, but not true to its Kentucky roots.<br />
