Matzo Brei with Feta and Tomatoes

Matzo brei is a classic Jewish comfort food consisting of eggs cooked with matzo, often served around Passover. Some people like it sweet, and some like it savory. For this version, we soak crumbled matzo until softened, then mix with beaten egg and feta cheese. Cooked like pancakes, the matzo brei is finished with a topping of fresh tomatoes and oregano.

Directions

  1. Break 2 matzo sheets into pieces, then run under hot water for 30 seconds; drain well. Beat 2 large eggs in a bowl, season with salt and pepper and stir in 1/2 cup crumbled feta and the matzo. Scoop 1/3 cupfuls into a buttered large nonstick skillet over medium heat and cook until golden on both sides, about 3 minutes. Top with chopped cherry tomatoes, more feta, dried oregano, salt and pepper.
