Matzo Brei with Feta and Tomatoes

- Break 2 matzo sheets into pieces, then run under hot water for 30 seconds; drain well. Beat 2 large eggs in a bowl, season with salt and pepper and stir in 1/2 cup crumbled feta and the matzo. Scoop 1/3 cupfuls into a buttered large nonstick skillet over medium heat and cook until golden on both sides, about 3 minutes. Top with chopped cherry tomatoes, more feta, dried oregano, salt and pepper.
