Cherry-Lime Sparkler

Ingredients

1/2 pound fresh cherries, pitted

1 cup granulated sugar 

3/4 cup fresh lime juice 

1/4 teaspoon kosher salt 

4 cups seltzer 

Ice cubes and fresh mint sprigs, for serving 

Directions

Special equipment:
8 cocktail skewers and 8 highball glasses
  1. Place the pitted cherries in a large mixing bowl. Add the sugar, lime juice and salt. Stir until the cherries are evenly coated. Set aside at room temperature for 1 hour to macerate the cherries.
  2. Drain the cherry mixture, collecting and reserving all the juice. Thread the macerated cherries amongst 8 cocktail skewers and set aside for garnish.
  3. Stir together the reserved cherry juice and seltzer in a small pitcher.
  4. Fill 8 highball glasses with ice cubes. Pour the cherry sparkler over the ice and garnish each glass with a skewer of cherries and a sprig of mint. Serve immediately.

Fantastic drink with a fabulous color!! I didn’t add quite so much sugar because my cherries were picked off the tree sweet. You do need it for the juice, though, that gives the beautiful flavor and color. This is a perfect drink for special occasions!!
