Grilled Pineapple Mezcal Margarita

Ingredients
Two 3 1/2-inch pineapple spears
1/2 ounce fresh lime juice plus 1 lime, halved
Kosher salt, for rimming
1 ounce mezcal
1 ounce tequila
1/2 ounce orange liqueur, such as Cointreau
1 ounce fresh pineapple juice
Directions
Special equipment:
a cocktail shaker and muddler- Heat a grill pan over medium-high heat until hot, then add the pineapple spears and grill until all sides have grill marks, about 3 minutes per side. Set aside to cool.
- Rim a rocks glass by running a lime half around it, then dipping in the salt. Fill the glass with one grilled pineapple spear and fill with ice to the top.
- Add the other pineapple spear to a cocktail shaker and muddle until the juices are released. Add the mezcal, tequila, orange liqueur, lime juice and pineapple juice. Fill the shaker with ice and shake to combine. Strain the drink over the prepared glass and serve.
