Honey Ricotta with Cherries

Ingredients

1 1/2 cups fresh ricotta cheese

1/2 cup cherries, pitted and chopped 

1/4 cup sour cream 

2 tablespoons honey 

Kosher salt 

1/2 cup chopped almonds 

Directions

  1. Whole wheat crackers, for serving
  2. Combine the cheese, cherries, sour cream and honey in a bowl. Fold the ingredients together so as not to discolor the ricotta from the cherries. Season with salt.
  3. Place the mixture in a serving container and top with the chopped almonds. Serve with whole wheat crackers.

I loved this! I felt good while eating it and it fills you up in such a satisfying way from small amounts! Note for making it again, add the salt to individual portions and not to the whole thing. It made the water come out when I stored it and so I think adding salt right before eating it to smaller parts would help with that.
