Parisian Aperol Spritz

A traditional Aperol Spritz is made with prosecco and club soda, but in this version, I eliminated the soda and opted for Champagne over prosecco. I like brut Champagne in this drink because it’s dry, which means the cocktail won’t be overly sweet. I serve this in large Burgundy or Bordeaux glasses because the presentation is spectacular and particularly festive.

Ingredients

2 orange slices

2 splashes bitters

2 ounces Aperol

2 ounces Champagne, chilled

Directions

  1. Fill a large wine glass two-thirds full of ice and place 1 of the orange slices in the glass.
  2. Sprinkle the bitters into the bottom of the glass. Add the remaining slice of orange and top with the Aperol and Champagne. Serve immediately.
