Ingredients

Oil, for oiling grill

1/2 pound red chile peppers 

2 habanero chiles 

2 cups white vinegar 

2 tablespoons cayenne pepper 

2 tablespoons salt 

2 tablespoons sugar 

1/2 teaspoon xanthan gum 

Directions

  1. Preheat a grill over medium-high heat. Lightly oil the grill grates. Grill the red chiles and habaneros, turning occasionally, until charred all around. Cut stems off and let cool. In the bowl of a food processor, combine the charred chiles with the vinegar, cayenne, salt, sugar, xanthan gum and 1 cup water. Blend well. Serve with anything, but beware of spiciness!
