Garlic Roasted Haricots Verts

These green beans are the perfect side dish for almost any dinner, whether it’s Wednesday night or Thanksgiving.

Ingredients

1 pound French string beans (haricots verts), stem ends removed

Good olive oil

3 garlic cloves, grated on a Microplane

Kosher salt and freshly ground pepper

Freshly grated lemon zest, to taste (1 lemon)

Directions

  1. Preheat the oven to 425˚ F.
  2. Put the string beans on a sheet pan and toss them with 3 tablespoons olive oil, the garlic, 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Spread them out on the pan and roast for 6 to 8 minutes, until crisp-tender and starting to brown on the bottom. Zest the lemon directly onto the warm beans and toss with a spatula. Sprinkle with salt and serve hot or warm.

This is a good recipe. Love roasted vegetables and these are perfect. Even great at room temperature.
