Ingredients

2 pounds ground beef

1 small onion, finely chopped

1/2 red bell pepper, chopped

2 cloves garlic, minced

1 cup fresh bread crumbs

2 eggs, lightly beaten

Salt

Pepper

2 teaspoon chili powder, optional

3/4 cup ketchup or tomato sauce

2 tablespoon mustard

1/4 cup chopped fresh parsley

4 slices bacon

Directions

  1. Preheat oven to 350 degrees. Combine all ingredients in a large bowl and mix well. Gently mound the meat mixture into a metal 9x5 loaf pan. Top loaf with 4 strips of bacon. Bake for 1 hour and 10 to 20 minutes. Remove from oven and let sit for 15 minutes before slicing.

I have made this meatloaf for 14 years, everyone that has ever eaten it has loved it! My 13 year old daughter has grown up with this recipe and for the past 4 years my now 10 year old step daughter requests this almost every week!! I lost the print out I had and could not remember the exact measurements of the ketchup and mustard ratio. So glad I found it here again!!! Thank you!
