Ingredients
3 pounds new potatoes, cooked
4 eggs, hard-boiled and sliced
3 tablespoons coarse-grain mustard
1 red onion
4 tomatoes, peeled, seeded, diced
1/4 cup chopped celery
1 tablespoon chili powder
1/2 cup olive oil
3 ears corn, roasted and shucked
1 poblano chili, minced
Directions
- In a large bowl blend all ingredients. Season with salt and fresh cracked pepper. Garnish with chopped parsley if desired.
