Leopold's Huckleberry Sauce

Ingredients

2 cups huckleberries

1/3 cup granulated sugar

2 tablespoons lemon juice

2 tablespoons cornstarch

1 1/2 teaspoons water

Directions

  1. In a saucepan over medium heat, add huckleberries, granulated sugar and lemon juice. Bring to a boil reduce heat and simmer for 5 to 8 minutes.
  2. In a small bowl, combine the cornstarch and water. Slowly stir into the huckleberry sauce and heat until thoroughly combined and thickened.

Yes, I made it, but using more juice that I obtained from draining the frozen huckleberries. I adjusted the recipe, and it turned out fabulous. I enjoyed some over vanilla ice cream, pancakes or waffles are next. Delicious!
