Peach Lemonade Spritz

You can use a fresh peach, nectarine or apricot here. You can also substitute thawed frozen peach slices or 3 ounces peach puree, canned peaches or peach juice if fresh fruit is unavailable. For best results, refrigerate all ingredients beforehand. This is such a refreshing cold drink!

Ingredients

1/2 cup sugar

Zest and juice of 1 lemon 

1 ripe peach, pitted and sliced into 8 wedges 

3 ounces Ketel One Botanical Peach and Orange Blossom Vodka 

2 ounces club soda 

2 fresh mint or basil sprigs

Directions

  1. Make the lemonade syrup: In a small saucepan, heat 3/4 cup water over medium heat. Add the sugar and whisk until the sugar dissolves, 1 to 2 minutes. Stir in the lemon zest and juice. Transfer the syrup to a small bowl and set aside to let cool.
  2. Muddle and mix: Place half of the peach in a cocktail shaker and muddle it. Add 4 ounces of the lemonade syrup, the Ketel One and a few ice cubes. Cover the shaker and shake thoroughly to blend.
  3. Serve: Divide the cocktail between 2 glasses with a few ice cubes and the remaining peach slices in each. Top with a splash of club soda. Garnish with the mint or basil. Stir and enjoy!

Alex! I saw this on The Kitchen Mother’s Day show this morning. Immediately to the store to pick up ingredients and made them tonight! This would make a wonderful brunch drink. It’s so refreshing, just the right sweet! I doubled the recipe, knowing I’d need to. How delicious!
